Bean Burrito

Black Bean Burrito

Here's a way to perk up your weekday meal. This meal has lots fiber.

Recipe:
1 can (15 oz) black beans, rinsed and drained
3/4 cup reduced-sodium salsa
1 1/2 tablespoons finely chopped chives or scallions
1 tsp chili powder
1/2 tsp sugar
1/2 tsp ground cumin
1/4 tsp dry mustard
1/8 tsp salt (optional)
Cheddar cheese

In a blender ,chop beans,salsa and chives or scallions. Mix in chili powder,sugar,cumin,mustard and salt.
put 2 tablspoons of mixture in flour tortilla. spread on 1 half ,sprinkle cheddar cheese over bean mixture and roll. Bake 15 min on 350 degrees..

Hints: Kids love sour cream and salsa over burrito after cooked!
